Easy Peasy Dinner Winners

Sadly Emma over at Frog, Goose and Bear has had to give up hosting Easy Peasy Dinner Winners, on a regular basis, due to time restraints. But she will still be posting very easy recipes from time to time when she can. She'll be leaving the McLinky link open so that we can still come back and link when we want to post an easy recipe (coz that's the kind she loves......and don't we all!!).

GLUTEN FREE HERB FLAT BREAD


I've been experimenting with foods that are gluten and yeast free lately, just to see if it helps with the energy levels and this is one I found on taste.com.au. I've used slightly different combination of flours to theirs.

Ingredients:
  • 1/2 cup buckwheat flour
  • 1/2 cup soy flour (I used potato flour here instead)
  • 1/2 cup rice flour (I used brown rice flour here)
  • 2 teaspoons gluten-free baking powder
  • 2 tablespoons butter, softened
  • 2 egg yolks
  • 1/2 cup finely chopped mixed herbs (such as basil, rosemary and thyme)
  • 1 tablespoon olive oil

Method

1.      Preheat oven to 220°C/200°C fan-forced. Grease a 30cm pizza baking tray.
2.      Sift flours and baking powder into a processor. Add butter. Pulse until mixture resembles fine breadcrumbs.
3.      Combine 1/2 cup cold water and egg yolks in a jug. Add to processor. Pulse until a firm dough forms. Turn out onto a lightly floured surface. Knead lightly until smooth and combined.
Roll pastry out into a 30cm circle. I rolled mine out on a large piece of non-stick baking and cooking paper. Place on prepared tray. Sprinkle with herbs. Drizzle with oil. Season with salt and pepper. Bake for 20 minutes or until golden. Cut into 8 wedges.


The original recipe said to serve with tomato, cucumber and onion salsa, but I found mine was quite delish with a plain ole salad! Although very tasty, I found it a bit dry and crumbled easily, possibly due to the potato flour? Not sure.
But the salt and herbs on the top was yummo!!.
