So I baked me a cake!

I'm in the midst of changing hosts for the web site and it is currently off line! I have been so overloaded with tranferring data into the new site, the old host cut me off on the 25th and with teething problems with the new host, I'm now in limbo until who knows when. Great for sales!!

So I felt I was in need of some comfort food. I started thinking about a cake that is so popular in America. Had heard about it a while ago, so I did a little googling and found a couple of recipes for a Red Velvet cake. The Americans seem to hold this cake in very high regard so I decided this was the one to give me much comfort!! lol.


Well, it turned out quite nice, but I'm afraid I can only say that it was just average. Tasted just like a chocolate cake with cream cheese icing.......which is what it is in effect.


Now before any of the American readers get up in arms over my comments.........I really think it was my own fault that it wasn't anything better than what it was. I never use white sugar and rarely white flour totally in a recipe. I'll eat things made from them when I'm out having coffee or lunch etc, but at home try to stay a little healthier, so therefore food that I bake tends to be a little heavier and sometimes will have a darker tinge to the colour coz I will use half and half or wholemeal flours and rapadura sugar. So I suppose that's why this particular cake didn't turn out as well as I expected.


The cake did come out very red as expected, coz the recipe calls for a whole bottle of red food colouring! (I wonder how healthy that is?) Because I did use that darker sugar in the icing, the look of the cake hasn't come out as stunning as it does in published pictures of them unfortunately. But it will certainly keep me comforted for a few days yet! :)

  1. Yum! That cake looks lovely Pam! My cakes never turn out either, my daughter had an egg allergy and I have to use egg replacer and it's just never the same... oh well!
    Hope everything turns out on your site ok, I had my website, I just got to the point where I was so over loading things onto it and trying to figure it out that I have just left it sitting there as is....
    sometimes its all just too hard!

    When I was a child, my grandmother made red velvet cake...and honestly, hers was to die for!! I don't know what's in the recipe you used for the icing...but my grandma made an icing that she cooked on the stovetop. I haven't had it in years, but I think I have my grandma's recipe...I may have to try making one.
    I can't wait to see what you do with your shutter!

    I really would love to try a proper red velvet cake. Maybe one day. The icing I used was made with cream cheese and not on the stovetop. But I have two recipes, slightly different to each other, and the second one uses flour, milk, sugar, vanilla and butter and is made on the stovetop. So it could be the same as your grandma's recipe. If you do make one I'd love to know how it goes.
    Yes should be fun working out what to do with the shutter.
